I love this recipe for the times you want to offer a gluten-free option stuffing or when you want something that feels just a little bit more elevated than traditional bread stuffing. I realize it may push some traditionalists over the edge, but it’s so good, you may just convert them to love this stuffing that has no bread.
What you need
1 1/2 c long-grain or brown rice, uncooked
2 c natural apple juice
1 1/2 c filtered water
2 tsp healthy oil of choice (avocado or olive oil work great)
1 medium apple, diced, skin on (optional)
1 small cooking onion or 1 large shallot
4 cloves garlic, pressed or minced
1 medium carrot, finely chopped
1 c celery, finely chopped
1/3 c oat bran
1/2 c dried cranberries
1/2 c slivered almonds
1 tsp sage and/or poultry seasoning
1/2 tsp thyme
salt & pepper to taste
What you do
- Cook rice according to package instructions, using combination of apple juice and water for cooking liquid
- In a large skillet, heat oil over medium heat, add all chopped fruits and vegetables until cooked and crisp, not soggy
- Add cooked rice, oat bran, cranberries, almonds and seasonings. Toss all ingredients together, well
- Use as stuffing for chicken or turkey
