Easy, no bake, bites of goodness
I just recently stumbled on a new nut butter in my favourite local health food store, The Peanut Mill. I was super excited to sample it and since I don’t derive much energy or nutritional value from eating nut butter on bread, I came up with this little concoction. It’s nothing fancy, but when you need a snack, it’s ready in minutes, probably before your bread would even be toasted.
What you need
1/4 C nut butter (I used Rainforest Nut Butter with Coconut)
2 Tbsp softened coconut oil
2 C organic rolled oats (get the gluten free kind if necessary)
1 Tbsp raw honey (if desired, I didn’t used any in mine)
2 Tbsp raw pumpkin seeds (or any other seeds you like)
1/4 C unsweetened shredded coconut (optional)
What you do
- In a mixing bowl combine nut butter, honey (if using) and softened coconut oil until well incorporated
- Add in rolled oats and pumpkin seeds until all ingredients are well combined
- With clean hands, take about a teaspoon worth of mixture and roll into small balls
- Roll the balls in shredded coconut (if desired) and lay on plate
- Refrigerate for about a half and hour to harden the little bites of goodness
