These two mocktails were created for Rooted & Radiant, an intimate summer gathering we hosted beneath the trees in a Niagara orchard.
When I started thinking about what to serve, I knew I wanted it to be more than something pretty in a glass.
I wanted every ingredient to have a purpose.
That’s why I chose tart cherry concentrate as the heart of both recipes. Not only because of its beautiful colour and gently tart flavour, but because cherries were in season and we were spending the evening surrounded by the very orchards they came from. It felt like a simple way to honour the place we were gathering.
Tart cherries also happen to be naturally rich in polyphenols and are one of the few foods that contain small amounts of melatonin. While no single food is a magic bullet, research suggests tart cherries may support sleep quality and recovery, making them a fitting choice for an evening meant to nourish both body and mind.
From there, each recipe takes its own direction.
The Cherry Coconut Lime Cooler is creamy and satisfying, thanks to a little full-fat coconut milk. The healthy fats create a more balanced, satisfying drink, while coconut water provides naturally occurring electrolytes to support hydration. A squeeze of fresh lime adds brightness, a little vitamin C, and just enough acidity to bring all the flavours into balance.
The Cherry Hibiscus Spritz is lighter and more vibrant. Hibiscus brings its beautiful ruby colour and delicate floral flavour while offering naturally occurring plant compounds that have been studied for their role in supporting heart health. Topped with sparkling water, it’s refreshing, celebratory, and a lovely reminder that something can feel special without alcohol.
I think we’ve been conditioned to believe that celebration has to come in a wine glass or cocktail glass.
I don’t believe that’s true.
Sometimes the most memorable drink is simply one that’s been thoughtfully made. One that’s beautiful to look at, delicious to sip, and leaves you feeling just as good an hour later as you did when you first picked it up.
That’s the kind of ritual I’m always looking to create.
Cherry Coconut Lime Cooler
Creamy, refreshing and lightly tropical.
Makes 1 serving
What you need
- 2 tsp tart cherry concentrate
- 2 tbsp full-fat canned coconut milk, well shaken
- ½ cup coconut water
- ¼ cup filtered water
- 1 tbsp fresh lime juice
- Maple syrup, optional, to taste
- Ice
What you do
Add all ingredients to a shaker or jar with ice. Shake well until smooth and frothy. Pour over fresh ice and garnish with a fresh cherry and a lime wheel, if desired.
Tip: Full-fat coconut milk naturally separates, so be sure to shake the can well before using. If needed, simply give your drink a quick stir before enjoying.

Cherry Hibiscus Spritz
Bright, floral and sparkling.
Makes 1 serving
What you need
- ½ cup strongly brewed hibiscus tea, chilled
- 2 tsp tart cherry concentrate
- 1 tbsp fresh lime juice
- 1 tsp honey or maple syrup (optional, to taste)
- ¼–½ cup sparkling water, chilled
- Ice
What you do
Fill a glass with ice. Add the hibiscus tea, tart cherry concentrate, lime juice, and honey or maple syrup, if using. Stir well. Top with sparkling water and garnish with a cherry, lime wheel, and a dried hibiscus flower, if desired.
I love creating recipes that do more than simply taste good. When ingredients can nourish us, support our health, and turn an ordinary evening into something that feels a little more intentional, that’s a beautiful combination.
