If I tally up all the things my clients say are their go-to indulgences, pizza wins by a landslide, followed closely by alcohol. I’m all for strategic treats and eating for pleasure occasionally, but I also believe in finding ways to make our favorites healthier and more supportive.
Cauliflower pizza crust is a perfect example—it’s an easy way to enjoy pizza more often, while keeping it nutritious and a part of your ongoing meal plan. And just because summer is winding down doesn’t mean we have to retreat to the kitchen. I’ve discovered a fun way to keep the summer vibes alive with a healthy twist on a classic favorite—pizza! This grill-able cauliflower crust pizza is perfect for enjoying the last warm days outdoors, combining fresh, nutritious ingredients with the joy of grilling. Of course, you can also make this recipe in the oven for those cooler days when you prefer to cook inside. Either way, you’ll have a delicious, wholesome meal that I’m sure everyone will love.
What you need:
For the crust:
- 1 medium head of cauliflower or 4 cups cauliflower rice (uncooked)
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder (optional)
- Salt and pepper to taste
Toppings:
Option 1: Margherita Style
- 1 cup fresh mozzarella cheese, sliced
- 2 tomatoes, sliced or wedged
- Fresh basil leaves
- Drizzle of extra virgin olive oil
Option 2: Chicken, Artichoke, and Sundried Tomato
- 1 cup cooked chicken breast, shredded or diced
- 1/2 cup artichoke hearts, chopped
- 1/4 cup sundried tomatoes, sliced
- 2 cloves fresh garlic, minced
- Drizzle of avocado oil
Option 3: Lean & Green Pizza
- 1/2 cup cooked ground turkey
- 1/2 cup bell peppers, sliced
- 1/4 cup onions, sliced
- 1/4 cup spinach leaves
- Drizzle of oil of choice
What you do:
Prepare the Cauliflower Crust:
- Preheat your oven to 400°F (200°C).
- If using a fresh cauliflower head, rice the cauliflower by grating it or pulsing in a food processor until it resembles rice grains.
- If using frozen cauliflower rice, thaw ahead of time and skip the steaming step.
- If using fresh cauliflower, steam the riced cauliflower for about 5 minutes and then let it cool. If using cauliflower rice, no need to cook.
- Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the cauliflower, egg, Parmesan cheese, oregano, basil, garlic powder, salt, and pepper. Mix well to form a dough. It won’t be a regular dough – but have faith, it’ll work.
Shape and Cook the Crust:
For Baking in Oven:
- Line a baking sheet with parchment paper.
- Spread the cauliflower mixture onto the baking sheet, forming a crust shape (about 1/4 inch thick).
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and firm.
For Grilling on BBQ:
- Preheat the grill to medium-high heat.
- Place parchment paper on a grill pan or pizza stone.
- Spread the cauliflower mixture onto the parchment forming a crust shape.
- Carefully place the parchment paper with the crust onto the grill and close the lid.
- Grill for 10-15 minutes, checking occasionally to ensure it doesn’t burn. The crust should be firm and golden.
Add Toppings:
- Once the crust is cooked, add toppings of choice.
- Bake in the oven for an additional 10 minutes or until the cheese is melted and bubbly.
- If grilling, place the pizza back on the grill with toppings and close the lid for about 5-7 minutes, until toppings are warmed or cheese melts.
- Top with garnishments and drizzle with oil if using.
Serve:
- Allow the pizza to cool slightly before cutting into slices.
- Enjoy your healthy, whole-food based cauliflower crust pizza!
Notes:
- Make sure to thoroughly squeeze the moisture out of the cauliflower to ensure a crispy crust.
- Feel free to experiment with other whole food toppings to suit your taste. Some favorites that support metabolism and blood sugar balance because they contain good ratios of protein, carbs, and fat include chicken, turkey, feta cheese, bell peppers, mushrooms, artichokes, hot peppers, spinach.
