What You Need (Serves 1)
- 1 apple
- 1 egg
- 2 tbsp rye flour
- 1 tsp baking powder
- ½ tsp ground vanilla
- 1 tsp coconut oil
- Pinch of salt
- About 50ml water
- Berries or other fruit for garnish
- Optional: Cinnamon for topping
What You Do
- Slice the apple into 0.5 cm thick rounds and remove the core. If you have an apple corer, remove the core first before slicing. Place the apple slices in a non-stick pan with a small amount of water and let them steam for 3–4 minutes until slightly softened.
- In a bowl, whisk together the rye flour, egg, baking powder, vanilla, salt, and 1 tablespoon of water until smooth. The batter should be thick but spreadable.
- Heat the coconut oil in the same pan where the apples were steamed. Spoon the batter over each apple slice, covering them evenly. Allow to cook until the edges begin to set, then carefully flip with a spatula and cook until golden brown on both sides.
- Remove the pancakes from the pan and stack them on a plate. Garnish with berries or other fruit and, if desired, sprinkle with cinnamon for extra warmth and flavor.
