What fruits and veggies come to mind when you think of summer? Go on, close your eyes and imagine your favourite flavours and foods that you look forward to fresh from the market or your garden.
Did your mind drift to include watermelon, tomatoes and fresh herbs?
This chilled summer soup takes some of the best seasonal flavours (in my opinion) to a whole new level.
There’s an old saying “what grows together, goes together”. And that is so true with these ingredients.
This recipe was born from an inspiration from Seamus Mullen, a fellow health advocate and kick ass chef when I was at a remote cottage only accessible by boat and realized I had all the ingredients to make it happen.
What you need
2 cups watermelon, chopped
3 tomatoes, chopped
1/2 bell pepper, chopped
2 spring onions, chopped
2 cloves garlic
Healthy splash of vinegar
1 cup extra virgin olive oil
Salt & pepper to taste
What you do
Blend until creamy. Chill for 2 hours then serve chilled.
So good! So summery!
I didn’t follow his recipe exactly… I used chopped garlic scape (heads), only a drops of EVOO and not as many tomatoes and topped it with some itty bitty micro garlic chives. Delicious!
