Phase One Soup Recipe – Metabolic Balance

This recipe is for the preparation phase for Metabolic Balance – Phase 1

During this phase, for the first two days, you’re eating vegetables only and they don’t have to be the ones listed on your customized nutrition plan during the first phase.  The idea is to eat only vegetables and omit protein and oils from your diet during these two days. You can use fresh or dried herbs to flavour your vegetables or soup.  Please feel free to use any vegetables that you have on hand or want to use up.

 

This sample recipe is for illustration purposes and to give you an ideas of what you can use. Please add or omit any veggies, herbs and spices that you like.

 

What you need:

3L of organic vegetable broth (or homemade broth that is free of protein or simply water will work too)

Onions

Celery

Carrots

Peppers

Cauliflower

Broccoli

Mini potatoes

Thyme

Red pepper flakes

Curry powder

Oregano

Turmeric

Sweet paprika

Bay leaf

Salt & Pepper

 

What you do:

  • Chop all vegetables and place in large stock pot with broth (or water) and spices.
  • Bring liquid to boil, then let the soup simmer on low to medium heat for about an hour.
  • Once soup is cooked, purée the soup in the blender and serve.
  • Enjoy!
