Blueberry Muffins – A Metabolic Balance Friendly Recipe

What You Need (Serves 1)

  • 75g dry chickpeas, soaked and cooked (or pre-measured from your Metabolic Balance® plan)
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mixed and set for 5 minutes)
  • 1 apple, grated
  • ½ tsp baking powder
  • ½ tsp ground vanilla
  • ½ tsp cinnamon
  • 1 portion blueberries
  • 1 tsp coconut oil (for greasing)
  • Water, as needed for consistency

What You Do

  1. Preheat & Prep – Preheat oven to 350°F (175°C). Lightly grease muffin tins with coconut oil or use parchment liners.
  2. Blend the Batter – In a food processor, blend chickpeas, flax egg, grated apple, baking powder, vanilla, and cinnamon until smooth. Add a splash of water if needed for a thick but spoonable consistency.
  3. Fold in Blueberries – Gently mix in the blueberries, keeping some whole for bursts of flavor.
  4. Bake – Spoon the batter into muffin tins, filling about ¾ full. Bake for 18–22 minutes, or until the tops are set and slightly golden.
  5. Cool & Enjoy – Let cool for a few minutes before removing from the pan. Serve warm or store in an airtight container.
