Watermelon Salad

Nothing says summer more than a refreshing watermelon for those hot sticky days.

This is another one of my favourite simple recipes, that is so often requested.

There’s not really a recipe to follow for this salad, per say. You can’t really mess this up.

All you have to do is add all the ingredients to a bowl and toss gently to create a salad or layer on a individual plate and serve individually to make it feel like it’s something special. If making a salad in bowl, I’d suggest letting the flavours mesh together by mixing it first and letting sit in the fridge for at least 30 minutes.

What you need

  • Watermelon (cut into cubes if making salad or wedges with rind removed for individual plates)
  • Feta cheese (cubed, for salad option or thin slices for the individual version)
  • Cucumber, de-seeded and thinly sliced (cut in half length-wise and scoop out seeds)
  • Red onion, thinly sliced (optional)
  • Fresh mint, chopped
  • Fresh basil, chopped
