I know… the thought of chocolate and avocado together gets you scratching your head and thinking really? How the heck can that work?

I’m glad you asked! The creaminess and mild flavour of the avocado make it the perfect match for the intense robust personality of cacao. A marriage made in heaven… well, at least in the kitchen.

The two main ingredients of this recipe (cacao & avocado) are loaded with nutritional power from antioxidants, fiber and healthy fats. I’m not here to promote the health benefits of these two incredible superfoods, I’m here to encourage you to give this simple recipe a try. If you’re a chocolate lover like me, it might just become a staple in your diet.

It’s quick, easy, delicious and nutritious, which is the foundation of my healthy eating quest… to keep things simple. Eat real foods, straight from the earth that taste damn good.

That’s what’s going on here with the help of a blender, food processor, or a Magic Bullet. If you don’t have one of those gadgets, you can spend a little time mashing everything together in a bowl until a creamy texture is achieved.

Chocolate Avocado Pudding Recipe

1 avocado, peeled, seed removed and mashed
¼ c maple syrup
¼ c raw cacao (organic if possible)
¼ c filtered water
1 tsp vanilla extract or 1/2 of vanilla pod
¼ tsp Himalayan salt
1 Tbsp cacao nibs (optional for topping)

Serves 2

Adding a banana to a double batch makes it a Chocolate Monkey (in my world anyway).
